I don’t know about you, but I dream about caprese salad. It screams summer. Because it is almost June, I thought I would celebrate by making my all time favorite summery food. The smell of the basil is enough to make you say hallelujah. But when you add the delicious basil to a plump, juicy red tomato with soft and creamy fresh mozzarella you have a match-mate in heaven. The best part is, you don’t need a recipe!
Slice tomatoes and serve with fresh mozzarella. Top with basil and drizzle the salad with extra virgin olive oil and balsamic vinegar. Then sprinkle with salt and pepper and dig in.
