Brown Sugar Cookies with Brown Butter Frosting

Brown sugar cookies with brown butter frosting…need I say more? Well these fluffy and soft cookies will melt in your mouth.  They have a similar texture to whoopee pies. My roommate and I made them one day before finals week. Baking therapy…or something.

For the cookies

  • 2/3 cup butter, softened
  • 1 1/2 cups brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream

For the frosting

  • 1/4 cup butter
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk

Preheat oven to 350 degrees.  For the cookies, mix the butter and brown sugar until smooth.  Then add the eggs and vanilla.  In a separate bowl, mix the dry ingredients.  Add the dry ingredients and the sour cream to the wet mixture a little bit at a time.  Drop 1 tablespoon size balls onto nonstick or lightly greased baking sheets.  Bake for about 8 minutes.  Let them sit out of the oven for a few minutes and then transfer to a cooling rack.  This recipe makes about two dozen cookies.

For the frosting, melt the butter in a saucepan over medium heat until it turns golden brown.  Watch it carefully, because this happens quickly.  Then remove it from heat and add the powdered sugar and milk.  If it is too thick or thin, add more powdered sugar or milk.  You want it to be spreading consistency.  Then spread over cooled cookies.  This recipe was adapted from a fellow food blogger, Scraps of Life.
