Chocolate ganache is hot cream poured over small pieces of chocolate. It can be very delicious when you use good quality chocolate, and makes The Dahlia Bakery’s Banana Cream Pie with Chocolate and Pecans so sensational.
- 1/2 cup finely chopped bittersweet chocolate
- 2 teaspoons honey
- 1/2 cup heavy cream
- 1 3/4 tablespoons unsalted butter, softened
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
Put the chocolate and honey in a heatproof bowl and set it aside. Heat the cream in a saucepan over medium-high ad bring it just to a boil. Remove the pan from the heat and immediately pour the cream over the chocolate. Allow it to sit for 1 minute, then whisk it until smooth. As soon as you get this consistency, add the butter and whisk. Add the vanilla and salt. Stir to combine.
Place a sheet of plastic wrap directly over the surface of the ganache and set aside to cool slightly, but do not allow it to cool enough to set.
